Honey Walnut Shrimp (Recipe)

Ingredients

  • 1 lb large shrimp, peeled and deveined

  • 4 large egg whites

  • ⅔ cup Mochiko flour (can be substituted with corn starch)

  • ½ cup walnuts, chopped

  • 2 tbsp butter

  • 2 tbsp brown sugar

  • ¼ cup mayonnaise

  • 2 tbsp honey

  • 1 tbsp sweetened condensed milk

  • Vegetable oil for frying

  • Green onions for garnish

Instructions

  1. Whip egg whites in a medium bowl until foamy. 

  2. Stir in Mochiko flour until it has a pasty consistency. Add more flour if too runny, or add more egg whites if not pasty enough.

  3. Heat vegetable oil in a heavy deep skillet or saucepan over medium-high heat until 350° F.

  4. Dip shrimp in mochiko batter, then fry in batches without overcrowding in hot oil until golden brown, about 5 minutes. Remove with a slotted spoon and drain on paper towels.

  5. Melt butter and dissolve brown sugar in another saucepan. Once dissolved, add in chopped walnuts and toast for 1 minute. Drain the candied walnuts and set them aside.

  6. In a medium mixing bowl, stir together mayonnaise, honey, and sweetened condensed milk.

  7. Add fried shrimp to the bowl and toss to coat with sauce, then mix in the candied walnuts.

  8. Garnish with green onions, and serve immediately.
