Ingredients
4 bone-in, skin-on chicken thighs
1 whole shallot, finely chopped (reserve a small portion for garnish)
1 medium yellow onion, diced
2 stems scallions, chopped
1 large jalapeño, sliced
1 piece lemon, quartered
1 tsp Knorr seasoning
1 tbsp white vinegar
1 tbsp soy sauce
1-2 tbsp mayonnaise
Salt, garlic powder, and onion powder (for seasoning)
Cooking oil (for searing)
Instructions
Prepare the Vegetables:
Dice the onion and shallot, setting aside a small amount of shallot to use later as a garnish.
Thinly slice the scallions and jalapeño.
Quarter the lemon and set it aside for serving.
Prepare the Chicken:
De-bone the chicken thighs and carefully peel off the skin.
Season the chicken thighs on both sides with salt, garlic powder, and onion powder.
Cook the Chicken Skin:
In a wok, preheat a bit of cooking oil over medium heat.
Add the chicken skin and cook until crispy, then remove and set aside. Leave the rendered fat in the wok for additional flavor.
Sear the Chicken Thighs:
In the same wok, with the oil still warm, add the seasoned chicken thighs.
Sear until browned on both sides, about 4-5 minutes per side (or until fully cooked through).
Remove the chicken from the wok and place it on a cutting board.
Chop and Mix:
Slice the seared chicken thighs into bite-sized pieces while they’re still warm.
In a large bowl, combine the chopped chicken, diced onion, diced shallot (except for the reserved portion), sliced scallions, and sliced jalapeño.
Add Seasonings and Sauces:
To the bowl, add soy sauce, white vinegar, Knorr seasoning, and mayonnaise.
Mix until all ingredients are well combined.
Garnish and Serve:
Finely dice the reserved small piece of shallot and sprinkle it on top.
