Ingredients

  • 3 tbsp (42 g) cooking oil, divided to 2

  • 4-6 large eggs, beaten

  • 3 cloves garlic, minced

  • 2 shallots, thinly sliced

  • 12 oz (340 g) Spam, diced

  • 6 cups cooked white rice

  • 2 tbsp (24 g) soy sauce

  • 1 tbsp (15 g) fish sauce

  • 1 ½ tbsp (22.5 g) oyster sauce

  • 1 tbsp (18 g) mirin

  • ½ tsp (1 g) sesame oil

  • ½ tsp (1 g) white pepper

  • 3 green onions, sliced

  • 2 tbsp (18 g) toasted sesame seeds

  • Furikake, for garnish

Instructions

  1. Prepare the Ingredients:

    • Whisk together the soy sauce, fish sauce, oyster sauce, mirin, and sesame oil in a small bowl.

    • Slice the scallions, separating the greens and whites.

  2. Cook the Eggs:

    • Heat 1 ½ tablespoons (21 g) of cooking oil in a large skillet over low heat.

    • Pour in the beaten eggs and cook until set, about 2-3 minutes per side.

    • Dice the cooked eggs into small pieces and set aside.

  3. Sauté Aromatics and Spam:

    • Heat the remaining 1 ½ tablespoons (21 g) of cooking oil in the same skillet over medium-high heat.

    • Add garlic, shallots, and scallion whites. Sauté until softened and fragrant.

    • Stir in the diced Spam and cook until crisp and golden.

  4. Combine with Rice:

    • Add the cooked rice to the skillet and toss to combine.

  5. Add the Sauce:

    • Pour in the sauce mixture and stir continuously until the rice is evenly coated and heated through.

  6. Finish and Garnish:

    • Sprinkle in the white pepper, fold in the cooked eggs, and toss until everything is well combined.

    • Garnish with scallion greens, toasted sesame seeds, and furikake (if using).
